The Del Valle ISD Child Nutrition Department is focusing on healthy eating with a new educational video series and campus food demonstrations. The department, operated by Sodexo, is centering the video campaign around the importance of nutrition and wellness.

Sodexo’s Executive Chef Andrew Giles features from-scratch cooking using fresh foods and vegetables in the videos. Beyond healthy eating, the videos focus on food safety in the kitchen, meal prep and cost out for a family of four, and more.

In addition to the videos, Sodexo chefs travel to cafeterias across the district with live cooking demonstrations during lunch periods. The demonstrations feature recipes utilized each day in district kitchens. The goal of the demonstrations is to expose students to a variety of foods, including vegetables.

“It is really about getting kids to step out of their box,” said Executive Chef Andrew Giles, “It’s important for them to try new foods or different ways to prepare foods. Overall, it has been successful, with students even coming back for second helpings of veggies.”

The healthy eating engagement series will continue throughout the school year.
